cherry – walnut and honey mustard chicken salad wraps

6             romaine leaves {you know, the big kind}
1             large can chicken in water, drained
1.5          cups cherries, pitted and semi-diced
1.5          cups chopped walnuts
2             tablespoons dijon mustard
1.5          tablespoons honey
2             tablespoons mayonnaise
.5            tablespoon garlic powder
salt to taste
pepper to taste

combine all ingredients in a bowl, mix, and serve on romaine.
enjoy.

sun-dried tomato and caper salad


sun – dried tomato salad with capers

3             tablespoons capers
1              jar giant white beans {in marinara sauce}
1              jar sun dried tomato {in oil}, mostly drained
1/4        tablespoon flower pepper grinder
1/4        tablespoon himalayan sea salt
2            cups herb salad mix, organic
1/4        cup pine nuts, raw
3/4        carton baby heirloom tomatoes, halfed

pour salad in large mixing bowl.
add tomatoes
spoon jar of giant white beans onto salad while slightly draining excess fluid with spoon
add (mostly) drained sun dried tomatoes. (the residual oil on these is needed)
mix pine nuts into salad
add 4-6 full turns of the pepper grinder
add 3 full turns of salt
mix

this is, dinner party good.
this is, your parents are coming over and they didn’t know what a chef you were.
this is, one of the best salads you’ve ever had.
